Meet the Candidates 

President Elect

 
Shannon Muhs:

Hello, I’m Shannon Muhs, dedicated volunteer for Nebraska Academy of Nutrition and Dietetics.
 
With 30 years of experience as a Registered Dietitian, my journey has been shaped by a deep commitment to helping others, particularly in challenging situations. Early in my career, I balanced my professional aspirations with raising my children as an independent consultant for organizations such as Diabetes Education Center of the Midlands and Hillcrest Health Hospice, just to name a few. As my children grew older, I joined Hy-Vee as a retail dietitian, where I honed my collaboration and marketing skills while expanding my outpatient nutrition counseling skills.
 
Currently, I serve as a clinical dietitian at Boys Town National Research Hospital,
primarily working with pediatric gastroenterology patients. I find immense joy in being part of a team that collaborates to support patients and their families on their health journeys. My approach emphasizes building strong relationships and employing creative solutions to complex problems.
 
As a dedicated member of the Academy for 30 years, I’ve volunteered extensively in the Omaha area and at the state level for the past 15 years. I am passionate about exploring solutions for the future of our profession, seeking ways to sustain our organization and better serve our community.
 
My top Clifton Strengths—Relator, Strategic, and Activator—reflect my commitment to fostering close relationships, recognizing patterns in complex scenarios, and turning ideas into action. I’m excited to bring positive change to our organization and value every relationship I’ve built along the way.
 
 

 

Treasurer

Carly Applegarth:

 

Carly Applegarth is a Food, Nutrition, and Health Extension Educator serving southeast Nebraska. She earned her bachelor’s degree in Exercise Science with a minor in Public Health from the University of Nebraska at Kearney in 2015, followed by a master’s degree in Nutrition and Health Sciences from the University of Nebraska-Lincoln (UNL) in 2021. Carly also completed her dietetic internship at UNL and has been a registered dietitian and active member of the Nebraska Academy of Nutrition and Dietetics (NAND) since 2020. Throughout her work as a research project manager at UNL, Carly has successfully overseen and managed numerous state and federal grants. She has ensured the responsible use of grant funds and facilitated research on children’s nutrition and the impact of caregiver interactions on children’s dietary intake. In her current role with Nebraska Extension, Carly brings evidence-based community nutrition initiatives and education to communities across the state. As the treasurer of NAND, she would be dedicated to supporting fiscal responsibility and advocating for registered dietitians across Nebraska and throughout the United States.
Beyond her professional endeavors, Carly enjoys a variety of activities. She is an avid reader of science fiction and fantasy books, and she enjoys running, trying new recipes, playing board games with her husband and friends, and spending time with her 8-month-old puppy.
