Campus Recreation has an exciting opportunity for a Nutrition Education Coordinator to join our team. This position will assist with Campus Recreation’s commitment to enriching the educational experience by promoting lifelong healthy living through the education and programming of nutritional services to UNL students, staff, and members of the Campus Recreation community.
The Nutrition Education Coordinator will:
- Lead a dynamic and comprehensive nutrition education program that engages students through individual consultations, group education, and interactive culinary experiences.
- Oversee the activation and ongoing utilization of both the Teaching Kitchen located in the University Health Center and the Wellness Kitchen within the Recreation and Wellness Center by coordinating cooking demonstrations, nutrition workshops, and hands-on programs to promote healthy eating habits and well-being.
- Develop, implement, and evaluate nutrition-focused events, services, and outreach efforts across campus.
- Facilitate presentations and collaborate with campus partners to market the program and enhance visibility and impact.
- Manage the program’s budget, prepare regular reports, and identify external funding opportunities through grant writing.
- Lead and manage a team of graduate assistants and student employees, including recruitment, training, and performance evaluations.
- Cultivate and maintain partnerships across campus, including serving as a preceptor site for the Nebraska Extension & Health Sciences (NEHS) Dietetic Internship program and supporting university-wide well-being initiatives.
Minimum Required Qualifications
- Bachelor’s degree in Nutritional Sciences & Dietetics or related field. Current Registered Dietitian (R.D.) through Commission on Dietetics Registration (CDR) of the Academy of Nutrition & Dietetics (AND).
- Licensed through the State of Nebraska as a Licensed Medical Nutrition Therapist (LMNT) or the ability to obtain within 2 months of hire. One year of experience.
- Coordinating/scheduling events and/or outreach programs for community nutrition education.
- Working with the adult population in individual and population-based nutrition consultations.
- Budget development/maintenance.
- Group presentation and public speaking skills.
- Dietetic internship and other related work goes toward minimum experience.
- Teaching/facilitation experience in Nutrition Education.
- Ability to successfully plan and teach cooking and meal preparation classes/seminars.
Preferred Qualifications
- Master’s degree as well as ServSafe Certification (or ability to obtain within 2 months of hire) Certified First Aid/CPR/AED Instructor (or ability to obtain within 2 months of hire).
- Supervisory experience in a college/university setting.
- Program experience in health promotion and/or disease management.
- Strong analytical, interpretative and interpersonal skills.
- Ability to conduct and maintain confidential information and conversations with clients/participants and groups.
- Excellent problem solving skills and sound decision-making skills.
- Certified Health and Wellness Coach.
