Registered Dietitian/Nutrition Manager

Responsible and supports the department with nutrition expertise and provides consultation and counseling services to students, Dining Services staff and other identified individuals. Provides nutrition education programs designed to meet the unique needs of individual students and student groups. Ensures proper allergen and trait identification and audits recipes and menus for accuracy and completeness followed by ensuring that required changes are made. Participates in the ingredient review/research and recipe development process. Develops and delivers training and outreach presentations on nutrition and food safety topics to full-time and student employee dining staff members. Demonstrates the desire, ability, and commitment to diversity, equity, and inclusion while working cooperatively with students, staff, faculty, and guests.

Minimum Required Qualifications: Bachelor’s degree in Nutritional Sciences & Dietetics or related field and at least 6 months of experience in clinical and/or community nutrition education. Applicants must be a Registered Dietitian (RD) or Registered Dietitian Nutritionist (RDN) through the Commission of Dietetic Registration (CDR) of the Academy of Nutrition & Dietetics (AND) and a LMNT (Licensed Medical Nutrition Therapist) through the State of Nebraska. Must possess strong verbal and written communication skills.

Preferred Qualifications: Master’s degree in Nutrition or related field and experience providing nutrition counseling and education in a college/university setting.
